Lemon Glazed Butter Cookies

A refreshing snack for the hot summer months. Enjoy! 
Ingredients:
  • 1.5 sticks unsalted butter, at room temperature
  • 3/4 cup splenda
  • 2 large egg yolks
  • 1/2 teaspoon pure vanilla extract
  • 1/4 teaspoon kosher salt
  • 2 cups all-purpose flour
  • 1 cup confectioners' sugar
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon grated lemon zest
Directions
  1. Combine butter and Splenda. Add the egg yolks, vanilla, and salt. Then add flour.
  2. Place dough into ziplog bag and roll into logs. Place in freezer until firm.
  3. Heat oven to 350° F. Slice the logs into 1/2 inch thick pieces and place on parchment-lined baking sheets. Bake until lightly golden, 16 to 20 minutes. Let cool on the baking sheets for 5 minutes, then transfer to cooling racks to cool completely.
  4. In a small bowl, whisk together the confectioners' sugar, lemon juice, and zest until it forms a thick but pourable glaze (add more lemon juice if necessary). Brush the top of each cookie with glaze and then keep in refrigerator.
